RBL Cookbook Winner: Saturday Night Brownies
In honour of The Royal British Legion’s centenary this year, and in line with the release of their veteran cookbook – ‘Cooking with Heroes: The Royal British Legion Centenary Cookbook’, Avery held a competition whereby residents were invited to share their favourite childhood food memories. Chef Ian at Hanford Court Care Home reveals the secret to his special Saturday Night Brownies. Inspired by his Saturday nights staying at his Grandad’s house as a child, staying up late and being allowed to eat whatever he wanted, including brownies, ice cream and biscuits, follow the recipe below to recreate Ian’s Saturday Night Brownies.
Instructions:
- First, melt 250g of butter and 250g of dark chocolate.
- In a mixer, combine 250g of plain flour, 250g caster sugar, and 5 eggs.
- Next, add the melted chocolate and butter and fold together.
- Finally, pour the mixture into a greased and lined tray and bake for approximately 25 minutes at 160c. Or until crisp on the outside but still gooey in the centre.
Allow the brownies to cool and then cut into your desired size and serve up!
