RBL Cookbook Winner: Lemon Meringue Pie
In honour of the Royal British Legion’s centenary this year, and in line with the release of their veteran cookbook – ‘Cooking with Heroes: The Royal British Legion Centenary Cookbook’, Avery held a competition whereby residents were invited to share their favourite childhood food memories. Head Chef, Lindsey Crockett at Avalon Court Care Home in Coventry, was a recipient of one of the prized cookbooks for her reminisce of a classic lemon meringue pie.
Speaking of her childhood, Lindsey mentioned, “My favourite dish is a lemon meringue pie, as it brings back special memories of Sunday dinners with my family when I was growing up. We only had a dessert or pudding on a Sunday, or when we had family over for a special occasion, and lemon meringue pie was certainly my favourite!
I am not a very sweet-toothed person, but I do love the combination of the sharp sweetness of the lemon meringue pie. It brings a touch of summer, whatever the weather or time of the year it is.
I find that our residents love lemon meringue pie, and now I like to make small individual pies, which are easy to eat, especially for the memory care suite and supporting Avery’s excellent cutlery-free dining ethos.”
